Hazard Analysis Critical Control Point is an internationally recognized and recommended approach to food safety that anticipates and prevents hazards associated with ingredients. It relies on the identification of Critical Control Points (CCP's) in food production and preparation processes. All CCPs are –in turn- closely monitored in order to ensure that food is safe for consumption.
